Recipe: The Love Marinated Chicken and Salad Vinaigrette

We LOVE to cook with beer and recently our Central/Western VA Sales Rep, Bryce, shared one of his favorite recipes on a local Roanoke TV station (yeah, he's famous now). 2 bottles (12 oz each) of The Love Wheat Beer 2 cloves of minced garlic 1 tablespoon of honey ½ cup of white balsamic vinegar ½ cup of olive oil Salt and pepper to taste 2 bone-in chicken breasts Mixed greens with salad fixings (tomatoes, cucumbers, onions, mandarin oranges, etc.)


Put 2 bottles of "The Love" in a pan and bring it to a boil over high heat. Cook for about 10 minutes or until the beer has reduced to about 1 cup. Then remove pan from stove. Once it is cool, mix ¼ of a cup of the beer with the white balsamic vinegar, honey, olive oil, and garlic. Whisk all of those ingredients together, then toss salad with vinaigrette.


Season chicken with salt and pepper. Over medium heat, cook chicken in pan for about 8 minutes, then flip chicken and cook other side for 8 minutes. Cover chicken with the left over "Love" and serve once chicken has rested for 10 minutes.
